From Asian eateries and Spanish tapas restaurants to sizzling steakhouses and international buffets, every ship in the Marella Cruises fleet has at least seven globe-trotting restaurants for you to dine in. And best of all, meals in no fewer than four of them are included in your cruise as standard. There’s plenty of options for between-meal bites, too. Our midnight buffets are on-hand to cure any late-night cravings, and the Snack Shack takes care of speedy pick-up-and-go options for breakfast and lunch. To mix up the choices even more, there’s a regular Dress to Impress dinner, as well, where the menu gets as much of a dressing-up as you do.

When did you first take an interest in cooking?
I grew up in the Philippines, and my grandparents taught me about food preservation from an early age. They taught me about how ants store food for rainy days. From then on, I understood how important food was.
What’s your food philosophy?
My passion is sharing culinary knowledge. I do demonstrations on board. I also love inventing. The possibilities are endless for creating new ways of presentation and combining different ingredients. I refuse to stop creating the sort of menus you can’t find in cookery books.
What do you do when you’re not cooking?
I enjoy fishing with friends and gardening. I believe I have a magical touch with growing greens.
What’s your favourite dish to cook?
It’s choucroute à l’alsacienne – a rich platter of sausages and ham on a bed of sauerkraut. It’s not to be missed, especially with a cold bottle of beer.
